About Dinosaur Bar-b-que
The awarded winning Dinosaur Bar-b-que originated in 1983 from the idea of founder John Stage and his two partners while attending the Harley Rendezvous, a massive motorcycle gathering near Albany, N.Y. They decided that bikers deserved good food with Dinosaur Bar-b-que being the source of that food. Over the course of the next five years, using their mobile concession stand, they provided bar-b-que at various motorcycle shows, fairs, and festivals occurring in the Northeast region.
In 1988, tired of being on the road a good bit of time, they opened the first Dinosaur Bar-b-que in downtown Syracuse, N.Y. In 1990, the Syracuse location has expanded, adding size, adding a full bar, full-service dining and live music. Throughout the next 14 years, seven additional locations have been opened: Rochester, NY (1998); Harlem, NY (2004); Troy, NY (2010); Newark, NJ (2012); Stamford, CT (2012); Brooklyn, NY (2013) and Buffalo, NY (2014).
Southern bar-b-que is the basis of Dinosaur Bar-B-Que, while their own twist result in giving their bar-b-que it’s own flavors and unique character.
