I am a busy Dad but I find time to scour blogs and Pinterest for great recipes to make several times a week for my family. We love potstickers and this recipe was so easy I had to try it. Instead of ordering out for Chinese, make homemade potstickers and fried rice for a complete meal.
Nasoya all natural Wonton Wraps to speed things up. I adapted my recipe from the Damn Delicious Sesame Pot Stickers recipe.
PotStickers Ingredient:
- 1 lb. ground chicken
- 3 oz shiitake mushrooms
- 2 cloves garlic, mashed (or you can use the garlic in a jar for convenience)
- 2 green onions, chopped fine
- 2 Tablespoons soy sauce
- 1 teaspoon sugar
- 1 Tablespoon Grape Seed oil (you can also use Sesame oil if you like)
- 1 Tablespoon freshly grated ginger (or ginger powder if you don’t have fresh)
- 1 teaspoon white vinegar
- 1/4 teaspoon black pepper
- 36 2-inch Nasoya wonton wrappers
- 2 Tablespoons grape seed oil (you can use vegetable if you don’t have grape seed oil)
- Soy sauce, for serving
- Small bowl of water
Potstickers Cooking Instructions:
In a large bowl, combine chicken, mushrooms, garlic, green onions, soy sauce, sesame oil, ginger, vinegar, sugar, and pepper. Mix well so everything is coated.
Place the wonton wrappers on a work surface or kitchen counter. Drop one tablespoon of the mixture into the center of each wrapper.
Using your fingers as shown above, rub the edges of the wrappers with water and fold the dough over crimping the edges to keep the mixture inside of the potsticker.
Heat grape seed oil in a large skillet over medium heat. I like to use Grape Seed oil because it is lighter than vegetable oil. Add potstickers in a single layer and cook until golden and crisp, about 2 to 3 minutes per side. Make sure one side is done before flipping over. Be careful not to burn them as they cook quickly.
Serve with soy sauce for dipping.
I also made fried rice using green peas, fresh eggs, tiny carrot chunks, tofu. You can use a frozen carrot/peas mixture to make it faster. Add a little grape see oil into a hot frying pan and quickly fry up the egg first. Then add the pre-cooked rice and other ingredients and some soy sauce and fry, stirring continuously until everything is cooked through.
This looks fun and family friendly! Bet the kids would love to help spoon out the filling.
