A Vegan Tour of Greek Cuisine III at The Silo Cooking School

Chef Dino Kolitsas returns to The Silo Cooking School in New Milford on Saturday, April 12, 2025, at 3:00 pm with another immersive culinary experience celebrating traditional Greek cuisine—completely plant-based.

This popular class showcases the rich flavors and textures of Greece through a fully vegan lens, offering a hands-on opportunity to explore time-honored dishes with a modern twist. The menu includes Cauliflower Capama braised in tomato and onion, Revithada (a hearty chickpea soup), crispy Lalagia doughnuts from the Peloponnese, and the classic Spanakorizo spinach rice dish. Guests will also prepare lemon-roasted potatoes and a bold walnut skordalia, a savory garlic dip.

Chef Dino blends storytelling with expert instruction, making each recipe an exploration of Greek culinary heritage. The class is designed for home cooks of all levels and welcomes anyone with a love for vibrant Mediterranean flavors.
