Looking for something special to serve at your next party? Try this Mushroom Duxelles Pate Recipe. Duxelles is a finely chopped mixture of mushrooms or mushroom stems, onions, shallots and herbs sautéed in butter, and reduced to a paste.

Ingredients:
- 12 oz sliced mushrooms (baby bella preferred to standard white mushrooms)
- 1/2 cup shallots
- 2 tablespoons fresh garlic, minced
- 2 teaspoon crumbed, dry rosemary leaves
- 1 tablespoon olive oil
- 3 tablespoons butter1/4 cup brandy
- lemon juice
- milk or cream
- 1/4 cup Parmesan cheese
- 1/4 cup flavored bread crumbs

Directions:
1. Melt butter with olive oil in non stick frying pan.
2. Wash mushroom and grate finely in food processor. Add to frying pan.
3. Grind shallots and fresh garlic finely in food processor. Add to frying pan.
4. Season with salt, pepper, juice of half a lemon, Rosemary leaves and brandy.
5. Return all to the food processor to blend together.
6. Sauté in a covered frying pan until cooked through and mixture is reduced somewhat.
7. Add Parmesan cheese and flavored bread crumbs mixing well.
8. Add enough milk or cream to bind and smooth out to spreadable consistency.
9. Bake uncovered in 300° oven until heated through and a light crust has formed on the top, about 20 minutes.
10. Serve warm with savory crackers.
